I found this note (below and in the photo) written inside the cover of a copy of The Soybean Cookbook by Dorothea Van Gundy Jones, first published 1965, and I think it’s great.
Would like to send a copy of this to everyone – but I feel they are so firmly programmed that they would not read it. I just have the feeling that you might. If you find that preparing the actual dried beans takes too long the health food store sell ready cooked beans in tomato sauce.
